  • 12 oz (340 g) high-quality kosher dark chocolate (pareve or dairy, 60–70% cocoa)

  • 1 cup kosher-certified crispy rice cereal (pareve)

  • ¼ cup toasted chopped almonds (optional, ensure kosher certification)

  • 1 tablespoon neutral oil (optional, for smoother melt if not tempering)

  • Flaky sea salt (optional, kosher-certified)


Instructions

Step 1: Prepare Pan

Line a baking sheet with parchment paper. Set aside.

Step 2: Melt the Chocolate

Option A – Simple Melt (Easier Method):

  1. Place chocolate in a heatproof bowl over simmering water (double boiler method).

  2. Stir gently until fully melted and smooth.

  3. Remove from heat. Stir in oil if using.

Option B – Tempered Chocolate (Professional Finish):

  1. Melt 2/3 of the chocolate to 115°F (46°C).

  2. Remove from heat and stir in remaining 1/3 chocolate until temperature lowers to 88–90°F (31–32°C for dark chocolate).

  3. Maintain this temperature for glossy, snap-finish bark.

Step 3: Add Crunch

Fold in crispy rice cereal and chopped almonds gently to avoid crushing.

Step 4: Spread

Pour mixture onto prepared baking sheet.
Spread evenly to about ¼-inch thickness.

Step 5: Finish

Sprinkle lightly with flaky salt if desired.

Step 6: Chill

Refrigerate 30–45 minutes until fully set.

Step 7: Break & Serve

Break into rustic pieces by hand.
